Mexican Lasagna

Let me begin by stating that I am notorious for finding things in my pantry/refrigerator and making up a recipe to incorporate said things.  Sometimes it doesn't turn out as planned.. Sometimes it's good.  This, we thought, was good.

I'm on an "eating plan" (my coworkers and I decided that we do not "diet," we go on "eating plans"), so my intention with this recipe was to create something that was relatively healthy but tasted good at the same time.  I am a sucker for all things Mexican, so I chose to go that route.

To begin, layer some tortillas into a casserole dish.  I used whole wheat because that is what I already had, but I think it would be better with plain tortillas.


Then, I spread on some salsa.. Next time, I will mix some sour cream with it.. but, alas, I still haven't been to the grocery store to buy some since taco soup night.



I browned some ground beef.. About 2 pounds.


and then added some black beans (deliciousness) and some corn.  I used shoepeg because that's what I had on hand.  I'm telling you, I'm notorious about this.  I ain't lyin'.





I then added a layer of the ground beef-black bean-corn mixture.


Add a layer of cheese.


Annnddd... Repeat the process and then top with taco sauce.


Add a little bit more cheese.


Then, bake at 350 degrees for about 25 minutes or so..


Viola!

And yes, that is a paper plate.  Not only am I notorious for making up recipes using whatever ingredients on hand, I'm also notorious for not wanting to wash dishes.

  1. This looks SO tasty! I plan to give it a whirl next week...thanks for sharing. I want to be more of a "make do with what I already have" kinda person instead of going to the store so much. That may be my goal for the next week!
